When she left, the building seemed sad and empty. A new vocation was required. Why not turn it into an auberge? Not a sophisticated restaurant, but rather a warm and friendly place, accessible to everyone?
This project saw the light of day in1978. It was a hazardous adventure, but the risk was stimulating. The initial period was modest, and sometimes difficult, but always full of good cheer and surprises.
